Ingredients
100 gramos de camarón
pequeño seco y sin cabeza
.
1 1/2 tazas de zanahoria
picada en cubos pequeños
.
1 1/2 tazas de papa
picada en cubos pequeños
.
3 jitomates.
1 cebolla
mediana
.
Unas ramitas de epazote fresco.
50 gramos de chile chipotle
pueden ser secos o adobados
.
1 cubo de concentrado
de caldo de camarón
.
2 dientes de ajo.
Sal
al gusto
.
1 1/2 litros de agua.

Preparation
Colocamos una cacerola honda en el fuego.
Añadimos el agua.
Añadimos 1/2 cebolla.
Añadimos un diente de ajo.
Añadimos la papa.
Añadimos la zanahoria.
Añadimos los camarones.
Dejamos hervir.
Colocamos la licuadora.
Añadimos un poco de agua
del caldo que tenemos en el fuego
.
Añadimos los jitomates.
Añadimos 1/2 de la cebolla.
Añadimos el chile chipotle.
Añadimos un diente de ajo.
Licuamos perfectamente.
Añadimos la mezcla licuada a nuestro caldo.
Añadimos el cubo de concentrado.
Añadimos el epazote.
Dejamos hervir.
Bajamos la flama y dejamos cocinar por 30 minutos.
¡Listo! tenemos nuestro caldo de
camarón seco
terminado.
