Ingredients
1 kilo de pancita de res, precocida.
100 gramos de chiles guajillos secos.
1 cebolla blanca.
1 jitomate guaje.
2 dientes de ajo.
Unas hojas de epazote fresco.
Sal de mar al gusto.
Agua la necesaria.

Preparation
Colocamos una cacerola en el fuego.
Añadimos suficiente agua
unos 1 litros aproximadamente
.
Añadimos los chiles guajillos
Previamente limpios
.
Dejamos calentar
hasta que los chiles queden suaves
.
Retiramos del fuego y reservamos.
Colocamos los chiles en la licuadora.
Añadimos media cebolla.
Añadimos el jitomate.
Añadimos los dientes de ajo.
Añadimos sal.
Añadimos unos 700 mililitros de agua
y licuamos perfectamente, reservamos esta mezcla
.
Colocamos una olla honda en el fuego.
Añadimos 2 litros de agua.
Añadimos la pancita de res.
Añadimos media cebolla
y dejamos por 40 a 45 minutos
.
Añadimos la mezcla que licuamos anteriormente
lo vamos a colar perfectamente
.
Añadimos sal.
Añadimos el epazote.
Dejamos cocinar
por otros 40 a 45 minutos
.
